Ingredients:
- 1/2 cup dates
- 1/2 cup goji berries
- 1/2 cup almonds
- 2 scoops chocolate protein (30g)
- 1 cup millet puffs
- the chocolate topping:
- 8 Tbsp coconut oil
- sweetener
- 2 Tbsp cacao powder
How to:
- Soak the dates and the goji for about 20 minutes, or pour over boling water and they are going to be soft in like 2 minutes!
- Blend the almonds into flour
- Add the dates and the goji berries into your blender/food processor and pulse few times until all the ingredients combine
- Add the puffed millet, protein and mix well
- Fill the muffin form with the "dough" in half
- Melt the coconut oil, let it cool down and then add cacao powder, sweetener and mix well.
- Pour the chocolate mixture over the cakes.
- Keep them in the fridge for at least 1-2 hours.
