Fresh Green Summer Salad

I fell in love with sprouting. You can sprout almost anyt grains (buckwheat, rice, oat ..) and legumes (lentils, chickpeas, peas ..). You just have to soak them overnight, then rinse and let them sprout in a container. Then you have to rinse them few times a day so they won't become moldy. And few days lates you have something you can eat on its own or add it into a sald :) Sprouts are some of the most healthiest things you can eat. They're more nutritious than the legumes and grains in its "dry" form and they're full of vitamin C. And you can use them in many recipes :)

Fresh Green Summer Salad

Ingredients:

  • 1 cucumber
  • 1 small lettuce
  • 2 cups sprouted lentils
  • Half a cup peanuts 
  • 1 Tbsp flax oil 
  • Juice from half a lemon
  • "Cereus" Spice mix (himalayan salt, basil, dill, parsley, oregano, tarragon, lovage, thyme, hyssop)
How to:

  • Wash the cucumber properly and cut them into small cubes.
  • Wash the lettuce and cut them into stripes.
  • Add the spice, lemon juice, flaxy oil and mix it all up.
  • Put the sald on the plates, sprinkle with peanuts and lentils.
