Amaranth Breakfast Porridge

Amaranth has a lot of positive effect on our health - it regulates blood pressure and cholesterol, contains anti-inflammatory and anti-cancer agents, increases immunity, it contains a lot of protein and fiber and it's also gluten free. Aztecs called Amarants the "mother grain". Amaranth porridge is a perfect way to start your day. 

Ingredients (1 serving):

  • 1/4 cup amaranth
  • 1/2 cup water
  • 1/2 cup plant-based milk
  • 1 tsp cinnamon
  • 1 Tbsp honey or other sweetener
  • big handful frozen berries
  • handful cashews
How to:
  • Cook the amaranth with water.
  • Add cinnamon, honey and when there's no more liquid, add the plant-based milk and cook for few more minutes.
  • Top with frozen berries and cashews :)
