Coconut, almonds, millet and dates. These few ingredients can create super delicious no-bake coconut pie. Coconut milk is very think and is pretty high in fat so the pudding layer will stick together perfectly ... and also it will make you full after one little piece.
Ingredients:
- 1 cup cooked millet
- 1 cup soaked dates
- 1 can (400ml) coconut milk
- about 1/4 hrnku plant-based milk (lower in fat)
- 1 package of pudding (I used almond flavour)
- 1-2 Tbsp honey*
- coconut chips for topping
*you can use any other liquid sweetener for vegan version - maple syrup, rice syrup ...
How to:
- Soak the dates for at least 15 minutes.
- Remove the water, dry the dates a bit and put them into a food processor or blender with millet - you should get a sticky mixture.
- Fill your pie form with this mixture. A little note - if you don't get the right ratio of dates and millet, it's possible that you won't be able to remove the bottom of the pie from the form. It doesn't change the taste of something .. but if you want the pie to be firm, either add more millet or put this bottom layer into an oven and bake for few minutes.
- Pour the coconut milk into a small pot and let it warm up a little bit.
- Mix the pudding mixture in the plant-based milk and add it into the pot. Add sweetener of choice and cook until the mixture gets thick enough.
- When you see the bubbles, turn off the heat and pour the mixture on the top of the millet & dates layer.
- Let the pie cool down and them put them into a fridge for at least 2 hours.
