Creamy Cauliflower & Leek Soup

I've never been a big fan of soups. For me, soups have always been kind of a "pre-meal", which I never enjoyed as much as the main course. Then I learned to prepare creamy soups with coconut milk and almost any kind of vegetables and I fell in love with them - especially now when the temperature is lower and lower, a bowl of comforting creamy soup makes you perfectly warm and full :) Give a try to the cauliflowe & leek soup according to my recipe.

Corn Chowder

If I should choose a soup to eat every single day, I would probably choose corn chowder - corn soup with coconunt milk, red bell pepper and celery. You just can't resist the delicious sweet taste of this creamy yummy soup !

Raw Gingerbreads (GF, vegan, allergy-friendly version)

Most of my family members make traditional Christmas sugarcookies so I always try to make a bit healthier options for the Christmas sweet treats. So we could feel like we're not such junk-foodies when eating all those vanilla rolls, gingerbreads and ginger sugarcookies ... 

These delicious gingerbread balls don't contain any sugar or fat and they're made only with healthy natural ingredients. They're suitable for vegans and celiacs as well as for people with nut allergy (when making a little change in the original recipe :)

Oatmeal with Persimmon and Tygernuts

Persimmon is an amazing fall/winter fruit, which contains loads of antioxidants, vitamin C, it helps against high blood pressure, it strenghtens our immunity and helps to improve quality of skin. They are alos high in vitamin E, C and magnesium. 
Tygernuts AKA the "earth almonds" are underground tubers of the shingle plant. They are perfect option especially for people who suffer from nut allergies, because you can use them instead of any nuts or nut flour. Together with oats and nuts, they create a delicious and nutritious breakfast.

Spicy Spaghetti Squash with Couscous

For me, pumpkins are one of the symbol of fall - along with the smell of cinnamon, colourful leaves and warm sweaters. I love summer when I'm lying on the beach by the sea, but when I'm in the city, I enjoy fall much more. I love cold mornings, when I put on my cozy bathrobe, make a hot oatmeal for breakfast and the long nights when I jump into bed with a warm blanket, a cup of tea and a book. 
But now let's come back to the pumpkins - butternut, spaghetti or hokkaido squash ... they're just a part of the fall atmosphere :)

Rice Carrot Noodles with Maple Syrup

I have so many ideas and so much inspiration for new posts. The only problem is that altough I would probably also have time for that .. I'm not able to put my thoughts into words. I spent the last week on a neo yin yoga teacher training with Deep Kumar and when I came back home from the course ... I didn't really feel like writing anything. I was chared with enery so much and I just wanted to enjoy that beautiful blissful feeling. However I don't want to leave this blog without any activity, so at least I'm gonna show you a recipe for an easy ligh summer lunch :)

Rhubarb & Strawberry Crumble

Rhubard is a super healthy vegetable, containing high amount of vitamin K, C, B, riboflavin, iron and much more. Rhubarb shouldn't be eaten raw, because it's very acidic and your digestion may not feel very well. So what to do with rhubarb to make it taste good and get all the health benefits as well? Coconut pudding pie (no bake, gluten free, vegan)

Coconut, almonds, millet and dates. These few ingredients can create super delicious no-bake coconut pie. Coconut milk is very think and is pretty high in fat so the pudding layer will stick together perfectly ... and also it will make you full after one little piece.

Vanilla & Coconut Oatmeal

How does my perfect morning look like? Waking up with sunrise behind msy window, stretching my body, doing some yoga, jógu, taking a cold wake-up shower and then preparing myself a delicious breakfast ... Okay, I admit it. I don't experience this type of mornings very often. Usually I wake up begrudgingly, after I put on my glasses I realize there's fu*king mess all around me, I get out of my bed, I get a fright by my reflection in a bathroom mirror ... and the only nice thing about the whole morning is the breakfast. So ... at least let's make it as good as possible !

Sweet Potato & Dried Tomatoes Quickie

Sweet potatoes are my thing. Not only because of the taste but also because of the super quick preparation. Sweet potatoes are soft much quicker than normal potatoes, not matter if you cook them or bake them in the oven. I used white sweet potatoes in this recipe, because they do not have such strong taste so even people who don't like the sweet taste of sweet potatoes will love this recipe :)

Fall Salad with Quinoa and Persimmon

I used to hate fall. I always imagined the beginning of the school year, flu and the dark morning. But you can also see this season from a different point of view. If I look at fall this way, it becomes my most favourite season of the year. The colourful leaves are falling from trees, when the weather is not nice, I'm looking forward to go home, light a candle, have a cup of tea or hot chocolate and wrap myself in a blanket. But what about the food? I love summer fruit, I love the variety and great selection. But what to eat during fall and winter?
