Healthy & Cheap

I often hear people saying that they can't eat healthy, because healthy food is too expensive. Well, it's more expensive to cook from high quality ingredients than to eat the cheapest processed food you can find in the store ... But if you have an average income and you're used to eat "normal" food, than eating healthy is not a problem ! :)

PB & Carob Thumbprint Cookies

Cookies with plain flour, butter and a lot of sugar belong to the past. This time I was experimenting with corn flour and as a "fat ingredient" I used peanut butter. They're sweetened with honey (you can also use any plant-based syrup) and if you use gluten free oats, the recipe is gluten-free too. I could eat the whole plate!

Spelt Walnut Cake with Avocado Frosting (Vegan & Refined sugar free)

Yesterday I finally created a succefull recipe for vegan muffins! Today I tried to make a cake with the same batter ... and I created absoltuely amazing walnut cake, that will be loved even by the people who are not keep on vegan diet or people who don't care about healthy eating.

White flour is replaced by spelt flour, which contain more fiber, white sugar is replaced by coconut sugar which not only has vitamins but which also gives the cake deliciou honey-caramel flavor. And there's an avocado hidden in the chocolate frosting. But even if you don't like avocado, you don't have to be afraid to try this recipe - you won't taste it at all in the combination with cacao :))

Gingerbread Applesauce Cake (Sugar+Diary+Wheat Free)

Baking without sugar and flour is always a challenge so if I succesfully change some old recipe to meet my condition, I'm really happy about it. This apple cake is perhaps the best thing I've ever baked. Really! It's perfectly sweet, it smells like Christmas gingerbread and it's full of healthy ingredients. I've baked this cake for three times I guess and it always disappeared in few minutes.

(Almost) Raw Coconut Chocolate Cake

There's one great thing about raw cakes - you can't spoil them so much that they'd be inedible. Few times I've created something that I wasn't able to pull out of the cake form - so asthetically it wasn't the best .. but the taste was amazing anyway. You can do any raw vegan cheesecake according this simple recipe - make the crust from soaked dates and oats or soaked nuts (or any combination). Use coconut milk instead of cream cheese for the next layer. To make it a bit thicker, add some cornstarch. You can add some cacao, vanilla or blend the milk with fruit. And then just put it into a fridge or a freezer and wait!

Pasta with Red Lentil Sauce

There's never enough quick and easy recipes. And the best of them are those whose preparation takes up to ten minutes but the results is so awesome that you could eat it every day. For me, this recipe fits in this category. Plus my main critic approved it (in other words, my brother who prefers fried chicken nuggets, white pastry and chips liked it too) !

Poppy Smoothie Bowl

On Friday I got the results of my blood tests, according that I have dairy allergy. I already noticed my skin gets worse when I consume more dairy products and I feel much better when I avoid dairy. On the other hand, almost everything contain at least a little milk and I didn't avoid it completely. Recently I was eating quite a lot of milk chocolate, for breakfast I used to have yogurt sometimes and for lunch (because I was too lazy to cook) I used to go to local vegetarian restaurant - where almost every meal I had contained dairy ... Anyway now when I know officially, I should remove dairy from my diet completely. So I plan to try new types of plant-based milk. They can be made from different nuts, grains, seeds and they have different specific tastes and also different nutritional values - some of them are higher in fat, others are higher in carbs etc. In this breakfast recipe I used poppy seeds milk. Poppy seeds contain iron, calcium, magnesium, mmanganese and other health-promoting substances. It improves skin quality, hair growth, strenghten bones, boost imunity .. So why don't you get a pack of health in the morning ? :)

5 Breakfast Ideas

No matter how my lifestyle looked like recently - my breakfasts stayed super healthy and big. Exactly the way I need them. I'm a breakfast person - I couldn't go anywhere and do anything before food in the motning. In this post I'd like to give you few tips for my breakfasts.

Tahini Oatmeal
Do you like halva? I used to love it before I realized that the bought halva is packed with added loads of sugar and fat. But I'll give you a tip - tahini sauce with a spoon of honey tastes EXACTLY like halva! I love this combination in oatmeal. In the picture there's oatmeal with tahini, honey, pineapple, berries, coconut nibs, sliced almonds and date sirup.

(Last-Minute) RAW Holiday Treats

Last year I got caught by the Christmas mood in the beginning of fall. I bought and wrapped the gifts in the middle of November, I baked the holiday treats in advance and I spent the rest of the Advent time by watching fairytales in TV and drinking a lot of cups of hot chocolate. This year it's absolutely different. A week ago I didn't have almost any gift, we're going to buy the Christmas tree today and I'm making the Christmas treats just now, few days before the Christmas Eve. If you share these feelings and you try to find recipes for some last-minute christmas sweets, these RAW balls (and squares) are the perfect solution :)

Single Serving Berry Crisp

I don't like cooking or baking a large amount of food because of two reasons. Frist, because of the fact I almost always try my own new recipe, I never know if the result will be successful of not. And I don't like throwing away full bowl of dough. Second - the amount is not desicive in our family, we eat all of it whether it be four muffins or two sheets of cookies .. Today I'm sharing with you a quick recipe for healthy and simple one serving recipe ...

GUIDE: The Perfect Oatmeal

I could eat oatmeal all the time. Even several times a day, in winter, in summer, with any spices and any kind of fruit on the top. I don't eat the instant from a package anymore, because the half of the amount was composed of sugar and the other half was oats with few little pieces of dried fruit or nuts. I can't eat it anymore not only because of the composition but also because of the fact that I would have to eat several packages to feel full. Since I started eating healthier I eat much more. Which is a bit problem sometimes because when I crave something really sweet and really unhealthy I eat a lot of it too :D
But let's come back to the oats! In this post I'd like to share with you my "guide" to the perfect breakfast oatmeal, that you can change and spice by your own ideas :)

Vegan Coconut Rizotto

Recently I realized that I'm much better in cooking than in baking, because my attempts to substitute all the fat, eggs and white flour with healthier alternatives are not always very succesfull. I prefer vegan cooking recipes, because there is no meat, no eggs and the meal is ready when it just tastes delicious enough. You don't have to care if it's too raw or if it's safe to eat ...

And so you can't make a mistake by trying this recipe for an easy but delicious coconut rice with baked veggies and fragrant herbs :)

Fall Cinnamon Pancakes with Pears (Gluten free!)

All of the photos on the instagram enticed me to make pancakes for quite a long time, but my existing experiences with making any type of crepes or pancakes ended just with a lot of doug in a dustbin and a bunch of dirty crockery. Yesterday I found a great recipe for pancakes with greek yogurt, I changed the recipe a bit and .. believe it or not, finally it was succesful! ♥ Altough I'm a person who can eat things like bananas, tomatoes and citruses all year long, I guess it's better to eat seasonal local food so now in fall (which haven't actualyl started yet, but in my imaginations I'm already walking with the colourful leaves on the ground and I'm comming back to a hot tea to the apartment, smelling because of an aromatic candle) I'm trying to add seasonal fruit and veggies like apples, pears, pumpkin and cabbage to my diet and from spices I prefer cinnamon and ginger now .. and this recipe include two of these typical fall ingredients too :)

Caramelized Sunflower Seeds Couscous

So I made a break from my everyday breakfast oatmeal and I tried new version of sweet couscous. The "normal" couscous is made from wheat (that I'm trying to avoid) so I used barley couscous for this recipe. The taste and the consistency seem same to me and in the combination with caramelized sunflower seeds, cinnamon and guttered chocolate it was just perfect ...

Peanut Butter & Maple Syrup Granola

As I already mentioned in How I lost 10 pounds post, since the change of my diet plan, I stopped eating granola. But it's so tasty!
Some time ago I tried my own granola - without using wheat, made only with oat flakes, honey and peanut butter. And the result was surpisingly awesome - perfectly baked big pieces of granola, delicious taste and especially no added sugar, gluten and flour. In this post I'll show you another variation, where I replaced the honey with maple syrup. The peanut butter and maple syrup? It can't out turn wrong :D  ♥
