When you come home hungry, you don't feel like cooking something complicated. But you can always find some healthy quick recipes instead of eating processed pastry or any other "fast food" :) This recipe is my favorite and every time I don't have time for making some complicated dish, these carrot noodles are the best choice - their preparation takes just less than ten minutes ! :)
Ingredients: (1 portion)
- 1 portion of rice noodles
- salt
- 2 medium-size carrots
- 1 Tbsp smooth peanut butter
- 1/4 cup plant-based milk
- 1 tsp soy sauce
- 1 Tbsp coconut oil
- sesame for topping
How to:
- Cook the noodles according to the instructions on the packag
- Make carrot noodles with the scraper
- Mix the peanut butter, milk and the soy sauce in small pan and warm it up
- Let the coconut oil melt on another pan and then fry the carrot
- Add the pasta to the pan
- Pour in prepared sauce and mix well
- Finally top with sesame and serve :)
