Caramelized Sunflower Seeds Couscous

So I made a break from my everyday breakfast oatmeal and I tried new version of sweet couscous. The "normal" couscous is made from wheat (that I'm trying to avoid) so I used barley couscous for this recipe. The taste and the consistency seem same to me and in the combination with caramelized sunflower seeds, cinnamon and guttered chocolate it was just perfect ...

Caramelized Sunflower Seeds Couscous

Caramelized Sunflower Seeds Couscous

Ingredients:
  • 60g barley couscous
  • 1 tsp. chia seeds 
  • 2 tsp. coconut sugar
  • a pinch of cinnamon
  • 20g sunflower seeds
  • 1 Tbsp honey
  • a piece of chocolate

How to:
  • Pour the water on couscous and cook for a while with the chia seeds and cinnamon 
  • Roast the sunflower seeds on a pan (without oil), add sugar and while stirring constantly let the seeds caramelize
  • Sweeten the couscous with honey, decorate with cinnamon, sunflower seeds and grated chocolate
