Spelt Walnut Cake with Avocado Frosting (Vegan & Refined sugar free)

Yesterday I finally created a succefull recipe for vegan muffins! Today I tried to make a cake with the same batter ... and I created absoltuely amazing walnut cake, that will be loved even by the people who are not keep on vegan diet or people who don't care about healthy eating. 

White flour is replaced by spelt flour, which contain more fiber, white sugar is replaced by coconut sugar which not only has vitamins but which also gives the cake deliciou honey-caramel flavor. And there's an avocado hidden in the chocolate frosting. But even if you don't like avocado, you don't have to be afraid to try this recipe - you won't taste it at all in the combination with cacao :))

Spelt Walnut Cake with Avocado Frosting

Ingredients:
CAKE
  • 1/3 cup walnuts
  • 1 cup spelt flour
  • 1/5 cup melted coconut oil
  • 1/4 cup coconut sugar 
  • almost 1/2 cup plant-based milk (I used rice milk)
  • *1 flax egg 
  • 1 tsp baking powder 
  • 1/2 tsp soda 
  • a pinch of salt
  • 1 banana
CHOCOLATE FROSTING 
  • 1 small very ripe avocado
  • 1 banana
  • 1 Tbsp cacao powder
  • 2 Tbsp coconut sugar
*1 egg = 1 Tbsp grounded flax seeds + 2,5 Tbsp water 


How to:

  • Optionally soak the nuts for few hours, then rinse and drain (soaked nuts are easier to digest and they have better nutritional value)
  • Mix the flour together with the sugar, milk, oil, flax seeds, baking powder, baking soda and salt 
  • Mash the banana, chop the nuts and add them into the batter
  • Pour the batter into a small cake form and bake in pre-heated oven for 180°C for about 15 min.
  • Meanwhile make the chocolate froasting - cut the avocado in half, scoop out the avocado flesh, add the rest of the ingredients and blend until smooth
  • Frost the cake with the chocolate cream, let it cool down and then top with fresh strawberries or any fruit of choice :)
