Vegan Coconut Rizotto

Recently I realized that I'm much better in cooking than in baking, because my attempts to substitute all the fat, eggs and white flour with healthier alternatives are not always very succesfull. I prefer vegan cooking recipes, because there is no meat, no eggs and the meal is ready when it just tastes delicious enough. You don't have to care if it's too raw or if it's safe to eat ...

And so you can't make a mistake by trying this recipe for an easy but delicious coconut rice with baked veggies and fragrant herbs :)

Ingredients (3 portions):

Coconut rice
    • 1 cup rice
    • 1 Tbsp. coconut milk
    • 2 Tbsp. grated coconut
    • salt
Pečená zelenina
    • 1 carrot
    • 1 cup diced celery
    • 1/2 bell pepper
    • olive oil
    • thyme, basil, salt
How to:
  • Cook the rice with coconut milk, grated coconut and a pinch of salt.
  • Clean and dice the vegetables and spice with fresh or dried herbs.
  • Add a bit of olive oil. 
  • Bake in the oven for 180°C for about 25 minutes - the rice will be ready too.

  1. Ooooo, miluji kokosovou rýži .. a vůbec všechno, kde je kokosové mléko. Má to takový nádech exotiky. Já bych tam ještě dala mé oblíbené kari nebo drcený zázvor :-)
