Gingerbread Applesauce Cake (Sugar+Diary+Wheat Free)

Baking without sugar and flour is always a challenge so if I succesfully change some old recipe to meet my condition, I'm really happy about it. This apple cake is perhaps the best thing I've ever baked. Really! It's perfectly sweet, it smells like Christmas gingerbread and it's full of healthy ingredients. I've baked this cake for three times I guess and it always disappeared in few minutes.

vegan wheat sugar free gingerbread Applesauce Cake

Ingredients:
  • 2 cups oat flour (blended quick or rolled oats)* 
  • 1/3 cup coconut oil
  • 2 flax eggs**
  • 2 cups applesauce 
  • 1/2 cup honey or maple syrup
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
  • gingerbread spice to taste
*for gluten free version, use certified gluten free oats
** 1 egg = 1 Tbsp grounded flax seeds + 2,5 Tbsp water

How to:
Mix all the ingredients in a bowl and then pour the dough into a baking form or baking sheet. You can top the cake with some walnuts and sprinkle with coconut sugar that is going to caramelize. Bake for about 30 minuts for 180°C.
