Rhubarb & Strawberry Crumble

Rhubard is a super healthy vegetable, containing high amount of vitamin K, C, B, riboflavin, iron and much more. Rhubarb shouldn't be eaten raw, because it's very acidic and your digestion may not feel very well. So what to do with rhubarb to make it taste good and get all the health benefits as well? Get inspired by this rhubarb & strawberry crumble ! :) J

Rebarbora recept
Ingredients:

  • 1,5 cup quick oats (use certified oats for GF version)
  • 4 Tbsp oat flour 
  • 6 Tbsp coconut oil 
  • 2+1 Tbsp maple syrup
  • 4 rhubarbs
  • about 1 cup strawberries 
Postup: 
  • Peel the rhubarb and cut into thin slices
  • Cut the straberries into quarters, put them into a pot with the rhubarb and add 2 tablespoons of maple syrup 
  • Add a bit of water and cook until the rhubarb gets a bit softer
  • For the streusel, mix the oats, flour and the rest of the maple syrup in a bowl 
  • Pour the rhubarb mixture into a baking dish, sprinkle with the streusel and bake for about 20 minutes for 180°C
