Raw Gingerbreads (GF, vegan, allergy-friendly version)

Most of my family members make traditional Christmas sugarcookies so I always try to make a bit healthier options for the Christmas sweet treats. So we could feel like we're not such junk-foodies when eating all those vanilla rolls, gingerbreads and ginger sugarcookies ... 

These delicious gingerbread balls don't contain any sugar or fat and they're made only with healthy natural ingredients. They're suitable for vegans and celiacs as well as for people with nut allergy (when making a little change in the original recipe :)



Ingredients:
  • 2 and 1/2 cup of pitted dates or date paste
  • 1 cup grounded Tygernuts or almond flour**
  • 2 Tbsp carob or cocoa
  • 1 Tbsp flax meal 
  • handful walnuts **
  • about 1/2 cup plant-based milk
  • 1 Tbsp gingerbread spices 
** If you suffer from nut allergy, use Tygernuts instead of walnuts. Tygernuts taste similar to walnuts and almonds and despite its name, it doesn't belong to nuts category so it's safe for people allergic to any type of nuts :)

How to:
  • Soak dates for a while to make them softer. 
  • Then rinse them and place them into a food processer with Tygernuts, carob, flaxmeal, milk and spice mix.
  • Blend the mixture until it forms a fine paste.
  • Add chopped walnuts and shape balls from the mixture.
  • You can roll them in cinnamon, cocoa or grounded nuts.
