I have so many ideas and so much inspiration for new posts. The only problem is that altough I would probably also have time for that .. I'm not able to put my thoughts into words. I spent the last week on a neo yin yoga teacher training with Deep Kumar and when I came back home from the course ... I didn't really feel like writing anything. I was chared with enery so much and I just wanted to enjoy that beautiful blissful feeling. However I don't want to leave this blog without any activity, so at least I'm gonna show you a recipe for an easy ligh summer lunch :)
- 2 servings of rice noodles
- 2-3 medium big carrots
- 1/2 Tbsp maple syrup
- a handful dried tomatoes
- 1 tsp coconut oil
- African Harissa seasoning, salt
How to:
- Cook the noodles according to the instructions. Don't forget to add salt
- Peel the carrots and then slice them with the peeler.
- Cut tomatoes into smaller pieces
- Melt the coconut oil on a pan, add carrot and tomatoes.
- Add a bit maple syrup and the spices.
- Mix the noodles with the prepared mixture :)
