Quinoa with Tomato Dates Sauce

My lunches are usually same - rice, pasta or something like that, fresh or cooked vegetables, lentils or soy and one of my two favourite spice mixes. I like these quick lunches but after a while it becomes a bit boring. Few weeks ago I've created completely new recipe and the lunch was so delicious, that I just have to give you the opportunity to try that too :)

Ingredients (1 serving) :
  • 1/2 cup quinoa
  • a handful cooked or canned chickpeas
  • 1 tomato
  • 5 dates
  • 1 tsp coconut oil 
  • 1 tsp dried garlic
  • salt
  • a pinch of chilli

Postup:
  • Cook the quinoa with a bit of salt according to the instructions
  • Soak the dates for a while to soften them, then dry them and cut into pieces.
  • Melt the coconut oil on a pan, add dates, diced tomato, garlic, salt and chilli. 
  • Mix it with cooked quinoa and you're done!

  1. Naprosto nechapu, ze jsem doted jeste nejedla quinou, vsichni ji tak chvali! Tenhle recept vypada vazne dobre, takze ho zkusim :)
