My lunches are usually same - rice, pasta or something like that, fresh or cooked vegetables, lentils or soy and one of my two favourite spice mixes. I like these quick lunches but after a while it becomes a bit boring. Few weeks ago I've created completely new recipe and the lunch was so delicious, that I just have to give you the opportunity to try that too :)

Ingredients (1 serving) :
- 1/2 cup quinoa
- a handful cooked or canned chickpeas
- 1 tomato
- 5 dates
- 1 tsp coconut oil
- 1 tsp dried garlic
- salt
- a pinch of chilli
Postup:
- Cook the quinoa with a bit of salt according to the instructions
- Soak the dates for a while to soften them, then dry them and cut into pieces.
- Melt the coconut oil on a pan, add dates, diced tomato, garlic, salt and chilli.
- Mix it with cooked quinoa and you're done!
