Sweet potatoes are my thing. Not only because of the taste but also because of the super quick preparation. Sweet potatoes are soft much quicker than normal potatoes, not matter if you cook them or bake them in the oven. I used white sweet potatoes in this recipe, because they do not have such strong taste so even people who don't like the sweet taste of sweet potatoes will love this recipe :)

Ingredients:
- handful dried tomatoes
- 1 Tbsp coconut oil
- 1 medium white sweet potato
- 1/2 herbal tofu
- herbal salt
- 1 Tbsp hummus
How to:
- Cut the sweet potatoes into cubes (you don't need to peel them) and cut the tomatoes into small pieces.
- Melt coconut oil on a pan.
- Add the sweet potatoes, crumbled tofu and herbal salt.
- Add hot water and cook for about 10 minutes.
- Finally put the mixture in a bowl, add a tablespoon of hummus and enjoy :)
