Vanilla & Coconut Oatmeal

How does my perfect morning look like? Waking up with sunrise behind msy window, stretching my body, doing some yoga, jógu, taking a cold wake-up shower and then preparing myself a delicious breakfast ... Okay, I admit it. I don't experience this type of mornings very often. Usually I wake up begrudgingly, after I put on my glasses I realize there's fu*king mess all around me, I get out of my bed, I get a fright by my reflection in a bathroom mirror ... and the only nice thing about the whole morning is the breakfast. So ... at least let's make it as good as possible !


Ingredients:
  • 1/2 cup quick oats (use gluten free oats if needed) 
  • 2 Tbsp coconut (+ for topping)
  • 1/2 vanilla bean (or about a teaspoon vanilla extract)
  • 1 cup boiling water 
  • 1 kiwi
  • handful berries 
  • 1 tsp coconut sugar (optional)
How to:
  • Put oats and coconut into a small pot. 
  • Cut the vanilla bean lengthwise and take off scoop the little seeds. 
  • Add vanilla seeds into the mixture, add water and cook for about 5-10 minut. Stir constantly to make the porridge perfectly smooth and creamy.
  • Serve hot with kiwi slices, frozen berries, coconut and coconut sugar.
