Corn Chowder

If I should choose a soup to eat every single day, I would probably choose corn chowder - corn soup with coconunt milk, red bell pepper and celery. You just can't resist the delicious sweet taste of this creamy yummy soup !


Ingredients:
  • 1 Tbsp oil
  • 1 onion
  • 2 garlic cloves
  • 2 red bell peppers
  • 2 celery sticks
  • 2 small potatoes
  • about 1 and 1/2 cup corn (canned or frozen) 
  • 1 cup vegetable broth or water
  • 1/2 cup coconut milk 
  • salt, pepper
  • 1 tsp sweet pepper 
  • 1 tsp hot pepper 

How to:
  • Melt a little oil in a pot, add onion cut into small pieces and finely chopped garlic
  • Meanwhile cut pepper, celery and potatoes into small pieces as well
  • Add all the ingredients into a pot and pour water or broth
  • Spice the soup with salt, black pepper, sweet and hot pepper powder
  • Cook until the potatoes are soft, then add coconut milk and blend it (the soup shouldn't be completely creamy, there should be some unmixed pieces))
