When I started limiting dairy in my diet, cheese and yogurt were the biggest problem. I used to love them and I had no idea what am I gonna eat instead. Now, few months later I don't crave them at all but if I did I would know how to replace them :)

You can make your own plant-based yogurt at home too. You need your favourite plant-based milk, some flavor, thickener (agar agar, xanthan, flax seeds, tapioca flour ...) and a "starter" that starts the fermentation. For tutorial, check for example this post. I haven't tried to make my own yogurt yet, but I'm planning to do it. I used to eat yogurt for breakfast quite often and now I usually rather replace it with smoothie bowls. I just blend some fruit with a bit of plant based milk, sweeten it with dates and topped with granola, nuts or some more fruit.

There's again a soy alternative of yogurt - I tried chocolate soy dessert by Alpro (tastes amazing but it contains sugar that I want to cut down on) and unflavored soy yogurt by Yoya (it tasted horrible on its own but with some fruit and agave syrup it wasn't so bad).

There are some dairy free versions of cheese which you can buy in health stores and some supermarkets. These products are usually made with soy and plant oils. You can use this "cheese" in all recipes - for cooking, baking, for spreads, salads, pizza etc. I don't buy soy cheese very often, but sometimes I use soy cheese for baking because it perfectly melts like normal dairy cheese. For salads I use shredded tofu or I just replace cheese with some nuts or roasted seeds to make the salad more special.

For homemade cheese sauce you can use nuts. Simply blend some soaked cashews with water, spices and nutritional yeast to get the cheese" sauce. You can also make cheese sauce with carrot or cauliflower. You can even make cheese like cheddar. There are a lot of recipes on the Internet - sesame seeds, nuts or sweet potatoes cheese ... You'll get the cheesy flavor from nutritional yeast.
