Carrot Cake Muffins (vegan, sugar free)

I was planning to try carrot cake muffins for a long time but I wasn't able to create the right ration of all the ingredients to make the muffins look nice and taste great at the same time. But now ... they're here! The most perfect, moist, sweet (enough but not too much) muffins without dairy, white flour and sugar!

Ingredients:
  • 1/2 cup coconut oil (→ nejlevnější kokosový olej)
  • 1/2 cup honey or maple syrup
  • 1 cup spelt flour
  • 2 eggs (I haven't tried vegan version yet, but flax/chia eggs should work as well)
  • 1 cup shredded carrot (about 3 medium carrots)
  • handful walnuts
  • handful raisins
  • a pinch of salr
  • 1 heaping tsp cinnamon
  • 1/4 tsp ground cloves
How to:
  • Melt the oil and honey using a water bath.
  • Let the mixture cool down and meanwhile mix all the dry ingredients in a bowl.
  • Add the eggs, and the mixture of oil and honey.
  • Fill the muffins form and bake for 180°C for about 15-20 minutes.
