There are more and more people with plant-based diet but there are not less people who think that "veganism is not healthy" and that "humans need meet" or "vegetarians/vegans lack protein". Personally I'm not "real vegan", I eat honey and because of my problematic skin I sometimes have to use non-vegan cosmetics, but these craps drive me crazy. This recipe is gonna show you that plant-based diet has all nutrients that human needs and that protein is found in a lot of plant-based sources ...
It's quite hard to propagate plant-based diet and a convince people around you that this diet is healthy (it's hard to talk about the ethical reasons, I think that you have to come to it yourself ...) when I'm often ill, my immune system is weak and I don't have very good skin. But actually maybe if I had stopped eating animal products sooner, I would be much healthier now. My body has problems with digesting animal products, especially dairy so no matter how healthy I have been trying to eat, I couldn't have been healthy as I used to eat a lot of dairy products. This recipe is 100% vegan and it contains a lot of plant protein- lentils, tofu and hemp seeds. Together with rice as a source of carbohydrates and arugula which is full of vitamins and more seeds as a source of healthy fats :)

Describing vs. Feeling
We're used to give names to everything around us, to hide the meaning behind symbols. When we were kids, our parents used to point at everything and say "This is a house, this is a car, this is a flower ..." Sometimes we're so busy describing and and indentifying things so we forget to feel and enjoy the things around us. We go for a walk and we know the names of all the flowers growing around the path and all stones lying on the ground, we could calculate air pressure and find out what world side is the wind blowing from - but we forget to enjoy all of these things. Somehow we didn't understand the life on this planet. It's either cold or warm. It's windy, sunny or it's raining. We see, hear and feel it. Sometimes all we have to do is to be present in present.

Ingredients (1 serving):
- 1 portion instant rice pasta
- 1/2 cup red lentils (peeled)
- Harissa spice mix
- 4 cherry tomatoes
- handful arugula
- 1/4 cup herbal tofu
- 1 Tbsp sunflower seeds
- 1 Tbsp pumpkin seeds
- 1 tsp unpeeled hemp seeds
- 2 tsp sesame seeds
How to:
- Rinse the lentils and cook for about 10 minutes with Harissa spice.
- Cook the pasta according to the tutorial - if using the instant noodles, you can just pour hot water and wait for few minutes.
- Meanwhile roast the sunflower, pumpkin and hemp seeds (without oil) in a small pan.
- Rinse the pasta, add more spice and put them into a bowl.
- Add cooked lentils, sliced tomatoes into quarters, arugula, shredded tofu and roasted seeds.
- And finally sprinkle it with sesame :)
